Galmarini's Ultimate Assado (Argentinian Barbeque)

 

Pork Marinade

Marinate pork tenderloin for several hours. Meat should be at room temperature at grilling time. Generously cover the tenderloins with large-grain (Kosher) salt and grill over low heat for 45 minutes to an hour (adjust time according to conditions). The ends of the tenderloins are usually "harvested" early, as they become fully cooked.

 

Beef

Beef should be grilled with a generous coating of large-grain (Kosher) salt, over low heat until appropriately done (45-60 minutes).

 

In Argentina the meat is customarily served with crusty bread and a rich Argentinian red wine.
